Arugula Salad
roasted cauliflower, and chickpeas, with lemon pasta and arugula
This arugula salad, is filled with fresh flavors. A hint of sweet with corn and peas. A salty kick of roasted chickpeas, and a crunch of cauliflower. Over a nutritional bed of peppery fresh arugula.
All these flavors together make for the perfect, fresh, flavorful, and colorful salad.
I used this salad as a lunch entree, but it could easily be a side to a delicious dinner, or a midday snack in a small portion. You could also add a protein such as chicken, or fish to make it a more filling meal.
