Lemon Raspberry Cupcakes!
These lemon raspberry cupcakes are a perfect summer treat. They're sweet and tart. The lemon cream cheese frosting makes them refreshing on a hot day. These are great for a summer gathering or picnic!
When I made these I used fresh raspberries, you can use fresh if in season, which I suggest, or you can use frozen raspberries. If you choose to use frozen don't defrost them first, leave them frozen. The fresh raspberries will be softer and create a moister cupcake.
These cupcakes have a buttermilk vanilla cake mix base, you can use a favorite vanilla mix, if you have one, or use the one I have used. The buttermilk cake mix makes for a more textured cupcake, as opposed to whole milk or a sour cream mix.
