Peppermint Bark
Happy Holidays everyone! I'm sorry I went ghost for a few weeks, I've been super busy at school with finals. When I go back to school today I'll officially be in my second trimester of labs! School has been really fun and so far I've done really well in class - all A's and one B last term! My next term I have a baking and pastry class so be ready for some fun desserts! I also have my meat fabrications class so let me know if anyone is interested in that! Along side those I have some serving and dining room classes that I'm both excited and nervous for. I'm hoping to post some holiday recipes for Christmas and New years! Be sure to like the page while you're there! Now onto the recipe; from what I found online this is the easiest peppermint bark out there! It's only 4 ingredients, and most of the time, it's waiting for the bark to set.
Ingredients:
- 12 oz. semi sweet chocolate
- 24 oz white chocolate
- 2 tsp. Peppermint extract
- 3 crushed candy canes
Method:
- Lay a piece of parchment paper onto a cookie sheet, for thicker bark use a smaller pan, for thinner bark use a larger pan, I used a 9x13.
- Using a double boiler (if you don't have an official one, just place a glass bowl over a pot of simmering water, and be sure that the water level doesn't touch the bottom of the bowl) melt the semi sweet chocolate until thin and smooth. Don't rush this process, if it's melted too fast or on too high of heat the chocolate will not set correctly later. Use medium heat, or steady simmer, this could take up to 10 minutes. Once it's about smooth add in 1 tsp. of peppermint extract. (I added a little bit more, so taste it to your liking)
- Pour the melted chocolate onto your prepared cookie sheet, allow it to set slightly, about 10 minutes.
- Meanwhile, melt the white chocolate using the same process you used for the semi sweet, and again add the peppermint extract once it melted, and adjust to your liking.
- Pour the white chocolate over the semi sweet, if it goes well for you then perfect, layer it! If you need to spread the white chocolate out and the two begin to mix, don't sweat it, use a toothpick to swirl the two together. Mine is swirled, and I think it's just as pretty, and tastes just as good!
- Sprinkle the crushed candy canes over the top immediately after pouring the white chocolate, then let the whole thing set at room temperature, until firm, or about 2 hours.

This is good at room temperature or in the fridge for about one week. It's simple and easy for holiday parties and activities! I brought some to a party with friends, and everyone loved it! It's easy to serve with no mess! If you live in Florida like me, where the winter isn't actually cold, just be sure to not leave it out to serve for too long because it will begin to melt again!
