 Air Roasted Coffee
This past week here at school I had an excellent time in my introduction to beverage class, where we discussed wine, beer, spirits and my favorite- coffee.  On day 8 of this class, we were dedicated for 6 hours, to talk about coffee.  So we headed over to the coffee shop next door- I've been there before not knowing anything about the fascinating reason why the coffee was so delicious.  I never thought twice about how they made their perfect coffee.  It wasn't bitter- it didn't have that burnt coffee taste that you get from a Starbucks.  So, when I found out that we were going to Alaska Coffee Roasting I was nothing but thrilled to find out what made this coffee so amazing.  

Alaska Coffee Roasting was started by Micheal Gesser.  He uses a new way of roasting coffee- using only air.  These super simple, air roasting machines were made by a professor at MIT.  Only few were made and there was an interview process to get the professor to make you one.  Luckily, Micheal got in close with him- he got an air roasting machine for himself and began Alaska Coffee Roasting in Fairbanks, Alaska. His sister later would open the second Alaska coffee shop here in North Miami.  
The unique air coffee roaster, works by heating up air in a chamber to about 550 degrees.   The air then blows the coffee, moving the beans throughout the machine.  The whole process takes about 7 minutes.  When coffee is roasted with air- there is no burning, no excess oils, no chemicals- just fresh delicious coffee.  Regular drum roasting can cause uneven roasting, and the outer shells to burn, but more importantly- air roasting allows the beans to freely move with the air flow during roasting.  This allows the outside shell to naturally fall off and are blown through another part of the chamber.  That outside shell is the part to burn and give coffee the bitter taste that it commonly has.  They roast all of their coffee to a medium roast.  This is just enough to enhance the flavor of the already quality coffee.  Alaska coffee roasting believes that a blonde roast just isn't quite enough and that a dark roast will ruin the flavor of the coffee.  The medium coffee air roast makes for the most natural and flavorful coffee.  Here is a short video of the air roasting machine in action.    

Alaska also has a full dining menu with everything from; fire oven pizza, sandwiches, quiches, salads and best of all pastries!  While everything is made in house with fresh quality ingredients- all pastries are prepared every morning from scratch.  Starting with a fresh pate a choux dough, and finishing with a perfectly sweet cream filling- everything is made by hand.  They have tons of vegetarian and vegan options as well.  Alaska truly has something for everyone.  

I definitely recommend to my coffee loving friends- doing some research around you and find your local air coffee roasters.  The search is worth it for a perfectly smooth coffee!  Don't forget to share this post with friends and family!
